If you’re looking for a new way to serve up eggs then you need to try this! A super simple ingredient list that makes for an easy breakfast, lunch or snack.

 

The avocado brings a plethora of vitamins, minerals, healthy fat, fibre and potassium. The egg brings protein, iron and choline making this a well balanced and nutrient dense snack.

Ways to serve avocado egg salad:

  • On toast
  • In a sandwich
  • As a dip
  • As a sauce
  • Eat it as it is for a snack!

What do you need?

3 hard boiled eggs, peeled

1 ripe avocado, peeled and pitted

A squeeze of fresh lemon juice

½ tsp garlic powder

2 tbsp finely chopped parsley

1 tbsp Greek yoghurt

 

Then...

  1. Roughly chop the eggs and set aside.
  2. In a bowl, mash the avocado and then add in the chopped eggs, parsley, garlic, yoghurt and lemon juice. Stir well.
  3. Store in the fridge in an airtight container for 2 days.
