If you’re looking for a new way to serve up eggs then you need to try this! A super simple ingredient list that makes for an easy breakfast, lunch or snack.
The avocado brings a plethora of vitamins, minerals, healthy fat, fibre and potassium. The egg brings protein, iron and choline making this a well balanced and nutrient dense snack.

What do you need?
1 hard boiled egg, peeled
1/2 ripe avocado, peeled and pitted
A squeeze of fresh lemon juice
1/4 - 1/2 tsp garlic powder
1 tbsp finely chopped parsley
1/2 tbsp Greek yoghurt
Then...
- Roughly chop the eggs and set aside.
- In a bowl, mash the avocado and then add in the chopped eggs, parsley, garlic, yoghurt and lemon juice. Stir well.
- Store in the fridge in an airtight container for 2 days.
