Avocado Pasta Sauce

Easy, nutritious and delicious with pasta! This sauce takes minutes to whip up and was a big hit with my little critic! It’s loaded with protein from the nuts, healthy fats from the avocado and bursting with vitamins and minerals.

It is also high in iron thanks to the spinach & cashew nuts. The vitamin C from the lemon juice helps to maximise the absorption of iron.

What do you need?

  • 1 ripe avocado
  • 1 cup spinach
  • 1/4 cup cashews
  • 4 tbsps oil
  • 2 tbsps fresh lemon juice
  • 1 tsp minced garlic/garlic powder


1. Whizz everything in the blender until it is smooth and creamy.

2. Pour over cooked pasta and sprinkle over with some grated Parmesan cheese (or sub nutritional yeast) and pumpkin seeds. 

NOTE: crush the pumpkin seeds for babies and toddlers.
