This pasta sauce is SO easy, nutritious and absolutely delicious with pasta!

This sauce takes minutes to whip up and is high in iron thanks to the spinach & cashew nuts, and the vitamin C from the lemon juice helps to maximise the absorption of iron.

There is also protein from the nuts, healthy fats from the avocado and this sauce is loaded with vitamins and minerals.

What do you need?

1 ripe avocado

1 cup spinach

1/4 cup cashews

4 tbsp oil

2 tbsp fresh lemon juice

1 tsp minced garlic/garlic powder


2 tbsp Parmesan Cheese



1. Whizz everything in the blender until it is smooth and creamy.

2. Pour over cooked pasta and sprinkle over with some grated Parmesan cheese (or sub nutritional yeast for a vegan alternative).
