Baby Friendly Cinnamon Pancakes 

My son LOVES cinnamon so I’m not sure why it’s taken me so long to come up with a recipe for cinnamon pancakes!!! These are simply delicious!

I love a blender pancake recipe, just chuck everything in and you’re good to go! Minimal dishes, minimal time and so delicious!

These pancakes are fluffy, bursting with flavour and packed with wholesome ingredients. Slow release carbs, fibre and a plethora of vitamins and minerals make this a really nutritious breakfast option.

They also freeze beautifully so double up the batch!

 

Prep: 5 mins

Cook: 10 mins

Serves: 1 adult  & 1 toddler 

Suitable From: 6 months + 

Can be frozen for 3 months  

What do you need?

1 cup/90g oats

1 cup applesauce * (see note)

2 tbsp butter at room temperature | (or substitute 2 tbsp coconut oil for dairy free alternative) 

1 egg | (or substitute 1 chia egg for egg free alternative)

1 tsp vanilla powder/extract

1 tbsp chia seeds

1 heaped tsp ceylon cinnamon 

1 tsp baking powder

 

Then...

  1. Add all of the ingredients to a blender and whizz until smooth.
  2. Melt a dash of oil in a skillet over a medium – low heat and drop in two tbsps of the pancake batter to form mini pancakes, continue until the pan is full; then flip each pancake as bubbles begin to appear and cook for a further 2 minutes. Repeat with remaining batter.
  3. Serve with your choice of toppings.

 

*Note:

If you don’t have applesauce, finely grate an apple and it will work in the same way.

Make it vegan:

Use coconut oil instead of butter and a flax egg instead of an egg.
