Baby Friendly Pumpkin Spiced French Toast Sticks

Perfect finger food that is bursting with warming spices and flavour. These little breakfast sticks make a balanced breakfast and you can even bake them in the oven ahead of time!

I always seem to have some pumpkin left after making any pumpkin related recipe, and these little french toast sticks are the perfect way to use it up!

They are also a great way to introduce a new flavour to your little critics! Z is quite the fan of pumpkin and gobbled these up!


I’m so excited to bring you this recipe in partnership with St Ewe’s super eggs. Their super eggs are not only super tasty, they are also the next generation in egg nutrition. The free-range hens are fed a scientifically developed “Super Feed’ which contains high levels of selenium, Vitamin D and DHA Omega ’s; which are fantastic for their health as well as ours! 

The hens absorb and deposit the nutrients into the eggs making them one of the most nutrient rich free-range eggs on the market. 

Vitamin D is essential for babies, toddlers and kids as it helps to support growing bones and teeth and these eggs are supercharged with Vitamin D!

They are:

  1. Perfect for little ones as they are most, fluffy and easy for little hands to hold.
  2. A great seasonal family breakfast! Serve alongside fresh fruit and a little extra maple syrup for adults!
  3. They are freezer friendly, so you can batch make these for breakfast another day!

 

Prep: 5 mins

Cook: 15 mins

Serves: 2 adults & 2 toddlers 

Suitable From: 6 months + 

What do you need?

4 slices bread of choice

2 St Ewe’s Super Eggs

1/4 cup milk (any kind)

1/4 cup pumpkin purée

1 tsp pumpkin spice OR 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/2 tsp all spice and 1/4 tsp ginger

1 tbsp ghee or coconut oil

 

Then...

If baking:

  1. Preheat your oven to 180c and line a baking tray with parchment paper. Lightly grease the paper with the ghee.
  2. In a bowl, beat the Super Eggs with the milk and pumpkin puree. Then add in the spices and mix well.
  3. Dip the bread into the batter for about 30 seconds, making sure both sides are well coated.
  4. Place the bread onto the baking tray and bake for 15 minutes.
  5. Cut into slices and serve!

 

If cooking on the stovetop:

  1. In a bowl, beat the Super Eggs with the milk and pumpkin puree. Then add in the spices and mix well.
  2. Dip the bread into the batter for about 30 seconds, making sure both sides are well coated.
  3. Heat some ghee/coconut oil in a pan and cook the bread for a couple of minutes on each side.
  4. Cut into slices and serve!
