Broccoli & Cheese Mini Egg Muffins  

Simple ingredients, packed full of nutrient dense ingredients and so delicious - these mini egg muffins are a healthy and nourishing breakfast, lunch or snack option. You can make them ahead of time as they keep well in the fridge.  

I’m so excited to bring you this recipe in partnership with St Ewe’s super eggs. Their super eggs are the next generation in egg nutrition. The free range hens are fed a scientifically developed “Super Feed’ which contains high levels of selenium, Vitamin D and DHA Omega ’s. 

DHA Omega 3 maintains and promotes heart health and supports brain, eye and nerve development. DHA Omega 3 is particularly essential for children as it support their growing bodies by assisting with cognitive development and proper eye development in their early years 

These delicious muffins are supercharged with nutrition thanks to the eggs and veggies! I’ve used broccoli, which is rich in vitamin C, to maximise iron absorption from the eggs.

Cook: 14 mins

Serves: 12 mini muffins

What do you need?

1 cup broccoli, finely chopped or grated 

1/2 cup grated cheese of choice 

1/4 cup spelt flour | or substitute whole wheat flour 

1 tsp oregano 

1/2 tsp garlic powder

2 St Ewe’s Super Eggs 

Then...

Preheat the oven to 180 degrees C and grease a muffin tin. 

Crack the eggs into a bowl and whisk well. 

Add the broccoli, cheese, herbs and flour to the eggs and combine until well mixed. 

Spoon the batter into the prepared muffin tin and bake for about 14 minutes, until the tops are golden and firm.

Run a knife lightly around the edge of each muffin before taking them out of the muffin tin. 

Store in the fridge in an airtight container for up to 5 days.
