Coconut & Mango Chia Pudding

Coconut & Mango Chia Pudding 

This is creamy and delicious takes minutes to whip up. The chia seeds are loaded with fibre, protein and lots of vitamins and minerals. Prep this the night before for a quick breakfast or snack time.

Prep: 5 mins

Cook: 3 hours 

Serves: 1 adult & 1 toddler

Suitable From: 1 year + (omit maple syrup for under 1’s)

 

What do you need?

  • 1 can full fat coconut milk
  • 1 tsp vanilla powder/extract
  • 4  tbsps full fat Greek yoghurt
  • 2 tbsps maple syrup or honey
  • 1/4 cup chia seeds

Toppings:

  • Diced mango
  • Unsweetened coconut flakes


Then...

  1. In a jar, combine the chia seeds, coconut milk, yoghurt, maple syrup and vanilla. and milk.
  2. Place in the fridge for a minimum of 3 hours but ideally overnight.
  3. To toast the coconut flakes, heat a pan on a low heat and when hot add the flakes to the dry pan. They will take a couple of minutes to toast.
  4. Before serving, stir through with diced mango and coconut flakes.


Note:

No honey for under 1’s.

Make it Vegan:

Use coconut yoghurt instead of Greek yoghurt.
