Healthier Rice Crispy Bars

These peanut butter puffed rice cereal bars are so delicious and a healthier spin on the classic rice crispy bars! 

They are so simple to make and a fun recipe to get your little one’s involved in! So gather up your ingredients and join us to whip these up! 

You can use any rice crispy cereal, I tend to use brown rice cereal but you can use any you have to hand.

The chocolate is completely optional but a fun way to use up any leftover Easter chocolate!

Prep: 5 mins

Cook: 2 hrs to freeze 

Serves: 16 bars  

NOTE: No honey for under 1’s.

What do you need?

 4 cups rice crispy cereal

1/2 cup natural peanut butter

1/2 cup honey or substitute maple syrup

Optional:

1 tsp vanilla extract or powder

 Melted chocolate to drizzle over the bars.

 Allergy Swap/Make It Vegan:

Use sunflower seed butter instead of peanut butter.
muse maple syrup instead of honey. 

Then...

  1. Line a baking tray with parchment paper and set aside.
  2. Combine the rice crispy cereal and peanut butter in a large bowl. Mix well.
  3. Pour in the honey and vanilla (if using). Keep stirring until the mixture comes together.
  4. Press the mixture into the lined baking tray, pressing down firmly to pack it all in. 
  5. If you are using chocolate, drizzle this over the top. 
  6. Pop into the freezer for 2 hours to firm up. 
  7. Store in an airtight container in the freezer for up to 3 months. This will stop the cereal become stale.
