How To Make A Chia Egg

There are lots of reasons for using chia eggs - whether it’s an egg allergy, a vegan diet, you’ve run out of eggs or you’re endeavouring to follow a more plant based diet, you may find yourself looking for egg replacements when cooking.

Chia eggs have a gelatinous texture and act as a binder in baked goods.

Will it work for every recipe?

I grew up with an egg allergy and I have tried and tested so many alternatives in almost every recipe I develop! My personal experience is that when it comes to egg replacement the same replacement method won’t work for every recipe.

I find chia eggs work best for breads, muffins, waffles, fritters, cookies and pancakes.

 Chia eggs don’t bind exactly like eggs so if a recipe calls for more than 3 eggs a chia egg usually won’t work!

How long does it take?

Chia eggs come together within 10 minutes. Usually when I’m baking, I prepare the chia egg mixture and then measure out the remaining ingredients so that I’m not waiting around for it to set!


Does it alter the taste? 

No! Chia seeds don’t impact the taste at all.

Replaces 1 egg

 

What do you need?

1 tbsp ground chia seeds * see note

3 tbsps water

 

Then...

  1. Add the chia seeds and water to a bowl and stir to combine.
  2. Allow the mixture to set for about 10 minutes. You’re looking for a thick gel like consistency.
  3. Use in place of eggs in the recipe you are following!

Note:

I prefer ground chia seeds to make chia eggs but you can use them while if you prefer.
