No Added Sugar Vanilla Waffles

These simple and delicious waffles contain #noaddedsugar and are naturally sweetened by the vanilla and coconut milk. Oats bring slow release carbs, the chia seeds bring omega 3’s and protein and the cashew butter adds some healthy fat. They are soft and spongy and can be cut into fingers making them perfect for babies too!

Cook: 10 mins

Serves: 1 adult & 1 toddler 

Suitable From: 6 months +

Can be frozen for 3 months  

 

What do you need?

1 1/2 cups oat flour or rolled oats 

2 tbsps chia seeds

1 1/2 tsps baking powder 

2 tbsps cashew butter 

1 tbsp vanilla powder/extract

4 tbsps melted butter 

1/2 cup coconut milk 

1 egg

Allergy Swap:

Use a chia egg in place of the egg.

Use melted coconut oil instead of butter.  

Then...

  1. Add the oat flour, chia seeds & baking powder to a bowl and mix well.
  2. Add in the cashew butter, vanilla, butter, coconut milk & egg and combine.
  3. Brush your waffle pan with some oil/butter and then spoon in the batter. Cook according to the instructions for your waffle maker (usually about 6 minutes).
  4. Cut into slices and serve!
  5. Alternatively, you can cook these like pancakes on a pan, cooking for a couple of minutes on each side.
