Vegan Chocolate Chip Cookies
These are the ultimate vegan chocolate chip cookie! Soft on the inside, crispy on the outside and deliciously chocolatey.
The vanilla adds a delicious flavour and a sprinkling of sea salt takes these to the next level! I love to eat these with a hot coffee!
The ingredients are simple and they come together in 20 minutes!

Serves: 12-14 cookies
What do you need?
1/2 cup coconut oil, at room temperature
1/2 cup coconut sugar
1 tbsp flaxseed or chia seeds
1 heaped tsp vanilla powder or vanilla extract
1 tsp baking powder
1 cup spelt flour
1/2 tsp salt (optional)
3 tbsps oat milk (or any other plant based alternative)
1 bar of chocolate, broken into chunks
Then...
- Preheat your oven to 180c and line a baking tray.
- Cream together the coconut oil and coconut sugar until smooth.
- Then slowly mix in the vanilla, flaxseed, salt (optional) and baking powder. Stir well to combine.
- Then add in the spelt flour and stir well.
- Pour in the milk and combine.
- Add in the chocolate and mix again.
- The mixture will be soft. You may find you need another tbsp of milk.
- Using an ice cream scoop, scoop out the mixture and flatten slightly. These will spread while they cook so leave space between the cookies!
- Bake for 10 minutes, until lightly golden.
- Cool before serving.
