Banana & Coconut Popsicles

It has been scorching over here in the UK so of course we made popsicles! This is a seriously simple recipe but tastes delicious. Fresh bananas, deliciously creamy coconut milk, vanilla and desiccated coconut result in a creamy popsicle. This recipe can be made without added sugar if your bananas are ripe, if not, add in a dash of maple syrup!

 

Prep: 5 mins

Cook: 5 hours 

Serves: 8 popsicles 

Suitable From: 6 months + (omit maple syrup for under 1’s)

Can be frozen for 3 months  



What do you need?

  • 1 can of coconut milk
  • 2 large ripe bananas
  • 1 tsp vanilla extract/powder
  • 2 tbsps desiccated coconut

OPTIONAL:

  • 2 tbsps maple syrup

 

Then...

  1. Blend everything together until well combined.
  2. Pour into popsicle moulds and freeze for 5 hours.
  3. Serve and enjoy!
