Fruity Tropical Fritters

 

These delicious banana, mango and pineapple fritters are bursting with flavour, free from any added sugar and perfect for breakfast or snack-time. They are made in one bowl and ready in 10 minutes! 

I’m thrilled to bring you this recipe in partnership with @miabenfresh - I love that their pouches are developed by nutritional scientists and made with fresh ingredients and packaged using high pressure instead of heat to preserve maximum nutrition and flavour - that’s why they need to be stored in the fridge!

Their pouches are organic, plant based, making these fritters naturally egg free and dairy free! They are also a fantastic source of vitamin C!

Cook: 10 mins

Serves: 10 fritters 

Suitable From: 6 months - slice into finger width strips.

 

What do you need?

1 ripe banana

1 tsp vanilla extract

½ tsp cinnamon

¼ tsp nutmeg

1 tbsp milled flaxseed

1/2 cup/60g spelt flour or use buckwheat flour for gluten free alternative

1 @miabenfresh Mango, Banana & Pineapple Pouch

1 tbsp coconut oil for cooking

 

Then...

  1. Mash the banana in a bowl until smooth.
  2. Squeeze in the Mia & Ben Banana, Mango & Pineapple pouch and mix.
  3. Add the vanilla, cinnamon, nutmeg and milled flaxseed, stirring to combine.
  4. Add in the flour and stir until fully combined.
  5. Heat the coconut oil over a low-medium heat, when hot, add spoonful’s of the batter. Cook for a couple of minutes until bubbles form and then flip and cook for a further couple of minutes.
  6. Repeat with the remaining batter.
  7.  This can be stored in the fridge for up to 2 days.
