Instant Pot Khichdi

khichdi is a one pot Indian dish that combines rice, lentils and healing spices into a porridge like consistency. Highly revered in Ayurvedic medicine, it is the perfect meal for when one is feeling poorly or you just need some serious comfort food! It’s packed with protein, wholesome, nourishing ingredients and is easy to digest.

 

Serves: 2 adults & 2 toddlers 

Suitable From: 6 months + 

What do you need?

• ½ cup dried green moong lentils  (soaked for 15 mins) *

•½ cup rice (soaked for 15 mins) *

•2 tbsps ghee

•1 tbsp minced ginger

•1 tsp turmeric powder

•1 heaped tsp cumin powder

•1 tsp coriander powder

•½ tsp asafoetida (optional)

•2 bay leaves (optional)

•A pinch of pepper

½ cup mixed vegetables (peas, carrots, sweetcorn & green beans work well)

•4 cups water

•A handful of chopped coriander

 

* If you don’t have time to soak them ensure you rinse thoroughly with cold water until it runs clear. 

Then...

  1. Rinse the soaked lentils and rice until the water runs clear.
  2. Press Sauté on the Instant Pot and heat the ghee. Then add the ginger and cook for about 30 seconds. Then add in the turmeric, cumin powder, coriander powder, asafoetida and pepper and stir to combine.
  3. Press Cancel and then add in the rinsed lentils, rice, bay leaves and vegetables. Pour in the water and stir well.
  4. Secure the lid and turn the steam release valve to Sealing.
  5. Set to Pressure Cook/Manual at High Pressure for 7 minutes.
  6. When the cycle completes, let the pressure release naturally for 10 minutes and then turn the steam release valve to Venting. Carefully open the lid and stir the khichdi.
  7. Serve with more ghee and a generous sprinkling of fresh coriander.

 

STOVE TOP VERSION:

 Follow steps 1-3 in a pan. Then gently simmer for 30-35 mins, stirring often.
