Puff Pastry Pizza  

I’m feeling as though I’m cooking even more than usual at the moment with all of us being at home at all day. I’ve been keeping lunch simple to minimise time in the kitchen and this puff pastry pizza has been a big hit!


I like using my homemade veggie loaded tomato sauce to get in a good boost of added nutrients and add delicious depth of flavour! You can find find the recipe in my eBook, Toddler Friendly Family Meals.

Cook: 20 mins

Serves: 2 adults & 1 toddler 

Suitable From: 6 months + 

 

What do you need?

1 sheet shop bought puff pastry

1/4 cup veggie loaded tomato sauce or passata 

1/3 cup grated cheese of choice 

1 tsp dried oregano

 

Optional:

1/4 cup veggies of choice to top

 

 Then... 

  1. Preheat your oven to 180c and line a baking tray with parchment paper. 
  2. Roll out the puff pastry into a large rectangle.
  3. Using a knife, score a line about 1cm from the edge all the way around as this will make the edges puff up.
  4. Spread the veggie loaded tomato sauce and then sprinkle the cheese over it. Top with any optional veggies and a sprinkling of the oregano. You can brush the edges with some milk/butter. 
  5. Bake for about 20 minutes, until the edges and puffed up and golden.
  6. Allow to cool slightly before cutting into slices and serving.
