No Egg Eggnog 


Creamy, delicious and light, this is a fun and festive drink! Add a shot (or 2!) of espresso and you will be drooling!

It’s easy to whip up, kid friendly as there are no raw eggs and it’s packed with protein and healthy fats making this a great snack-time option!

It comes together so quickly in a blender and keeps in the fridge for a few days. I like to soak my cashews overnight but if you’re short on time you could soak them for about 15 minutes in hot water.

Drink this warm or cold or you can add it to oatmeal, chia pudding, smoothies, whatever takes your fancy!

What do you need?

1 cup cashew nuts. soaked overnight or for at least 15 mins in hot water  

2 cups filtered water

1 can coconut milk

1 tsp nutmeg

1 tsp Ceylon cinnamon

1 tsp vanilla powder/extract

A pinch of salt (omit for babies & toddlers)

3-4 pitted dates * see note

 

Then...

  1. Rinse and drain the cashews and then add them to a blender along with all of the remaining ingredients.
  2. Whizz until smooth and creamy (1 minute).
  3. Serve warm or cold!
  4. Store in an airtight jar in the fridge for 3 days.

 

Note:

If the dates are hard, soak them in hot water for 15 mins and then drain before adding to the blender.
