Yoghurt Bark  

This simple and easy snack idea is highly nutritious and delicious! You NEED to add this creamy frozen yoghurt bark into your snack rotation! There is no added sugar making this a superb snack option for little ones, but I guarantee adults will love it too! 

I have included 2 variations for this simple recipe below. One using chia jam and the other using simple spices. 

I used a mini cookie cutter to cut fun heart shapes out of the strawberries for a Valentine's twist, of course this is totally optional! 

The berries bring antioxidants, vitamins and minerals, the greek yoghurt adds plenty of protein and healthy fat and the chia jam adds fibre, omega fatty acids, magnesium and calcium to this simple frozen delight. You can find my chia jam recipe here. 

Prep: 5 mins

Cook: 4 hours

Serves: 4 servings

Suitable From: 6 months + (for babies mash the fruit so that it is broken down into small pieces). 

Can be frozen for 1 week in an airtight container. 

Chia Jam Yoghurt Bark: 

What do you need?

1 cup full fat Greek yoghurt 

2 tbsp chia jam 

4 strawberries

A handful of blueberries & raspberries (any chopped fruit will work).

Allergy Swap/Make It Vegan:

Use coconut yoghurt instead of full fat greek yoghurt. 

 

Then...

  1. Line a baking tray with paper. 
  2. Spread the yoghurt onto the baking tray.
  3. Dollop on spoonfuls of the chia jam and swirl into the yoghurt.
  4. Top with the berries.
  5. Freeze for 4 hours.
  6. Break into pieces and serve.
  7. Store in the freezer for up to a week. 

  

Spiced Yoghurt Bark:

What do you need? 

1 cup full fat Greek yoghurt 

A handful of blueberries & raspberries (any chopped fruit will work).

1/2 tsp vanilla

Crushed seeds from 2 cardamom pods, finely ground. 

Allergy Swap/Make It Vegan:

Use coconut yoghurt instead of full fat greek yoghurt. 

 

Then...

  1. Line a baking tray with paper. 
  2. Combine the yoghurt, cardamom and vanilla in a bowl and then spread the yoghurt in the tray until even. 
  3. Top with the fruit. 
  4. Freeze for 4 hours. 
  5. Break into pieces and serve.
  6. Store in the freezer for up to a week.
