Veggie Loaded Recipes For Picky Eaters

All of these recipes are delicious, loaded with veggies, use wholesome ingredients and are simple to make!

 

1. Veggie Loaded Pancakes

These pancakes are an easy breakfast or snack option that is loaded with nutritious ingredients and gets in a good serving of veggies! These hold their shape well so they are perfect for little ones learning to self feed.

 

2. Carrot Cake Bliss Balls

Fudgy, delicious and sweetened only with dates! My son’s favourite vegetable is carrots so it was only a matter of time until we incorporated them into bliss balls! The almond flour adds healthy fats, protein and Vitamin E and the carrots are loaded up with Vitamin A. These are perfect for snack time or in lunchboxes.

 

3. Veggie Fritters

Here is a fast, easy and toddler friendly lunch/dinner idea. There is protein from the cheese and egg, a plethora of vitamins and minerals from the veg and egg and they taste delicious! I like to serve these alongside fruit/veg and diced avocado. They also work great with dips like hummus and guacamole.

 

4. Spinach & Courgette Fritters

5. 1 Bowl Savoury Muffins

Easy 1 bowl savoury muffins that are loaded with veggies, protein, fibre and fat! Their texture and size make them perfect for little hands.

This sauce isn’t about hiding vegetables but about adding extra nutrition and flavour to a homemade sauce! Use it as a pizza sauce, pasta sauce, for dipping veggies, there are so many possibilities!
