Banana Omelette

Okay, I know a sweet omelette might sound a little strange but this has been such a huge hit! It just works! It's fluffy, light, nutrient dense and has no added sugar. 

It is quick, easy, uses store cupboard ingredients and only takes a few minutes to whip up.

This simple omelette is loaded with protein, iron, healthy fat and lots of vitamins and minerals, making it a fab breakfast or snack for you and your little one.

You can double up the quantities if you have more mouths to feed!


What do you need?

1 ripe banana 

1 tsp Ceylon cinnamon

1 tbsp milled flaxseed

1 tbsp peanut butter

1 egg

Then...

In a shallow plate or bowl mash the banana with a fork until fairly smooth. 

Add the Ceylon cinnamon, flaxseed and peanut butter.

Crack in the egg and then whisk to combine. 

Heat the coconut oil in a pan over a low - medium heat. When hot, pour in the egg mixture. Cook for a 2 - 3 minutes on both sides, until cooked through. 

Slice into strips for babies.

Serve alongside fruit and yoghurt.
