Creamy Tomato Pasta

All toddlers love pasta right?! Today I was so short on time and threw lunch together really quickly. The cupboards were also a little bare so I used up whatever I could find in the fridge and it resulted in this bowl of deliciousness! 

This super quick flavoursome sauce comes together while the pasta cooks and it is so creamy and delicious! It couldn’t be any easier!

I love quick dishes like this as they are great for a speedy lunch or supper! I tend to use quinoa pasta or chickpea pasta and sprinkle on some hemp hearts to amp up the protein and serve alongside veggies to create a balanced meal.

Cook: 20 mins

Serves: 1 adult & 1 toddler

Suitable From: 6 months +

What do you need?

1 cup pasta of choice

1 tbsp avocado oil

1 heaped tsp minced garlic

A large handful of spinach, finely chopped

A handful of basil, finely chopped

1/4 cup tomato sauce or sub passata (I always have a stash of my homemade veggie sauce in the freezer)

A pinch of pepper

1/4 cup full fat cream cheese

A splash of milk


Then....

  1. Cook the pasta according to the packet instructions.
  2. Heat the oil in a pan and sauté the garlic  for a couple of minutes. Add in the spinach and basil and cook for a couple of minutes.
  3. Pour in the tomato sauce and cook for a few minutes.
  4. Then add in the cream cheese and pepper. Stir until smooth and creamy. Add in a splash of milk if the sauce is a little thick.
  5. Drain the pasta and add to the sauce, stirring well.
