Veggie Loaded Egg Pancakes 

An easy breakfast or snack that is loaded with nutritious ingredients and gets in a good serving of veggies! These hold their shape well so they are perfect for little ones learning to self feed.

Serves: 1 adult & 1 toddler

What do you need?

1 egg

1 tbsp milk (any kind)

1/4 cup grated vegetables or very finely chopped. I like to use grated raw broccoli and carrot in this.

1 tbsp spelt flour

1 tbsp chia seeds

1/2 tsp paprika

1/2 tsp cumin powder

1/2 tsp coriander powder 


  1. Whisk together the egg and milk until combined.
  2. Then add in the grated veggies, flour, chia seeds, coriander, paprika and cumin powder.
  3. Heat the ghee in a pan and when hot pour the batter in. Cook for a couple of minutes on each side.
  4. Slice and serve!
