Veggie Loaded Egg Pancakes
An easy breakfast or snack that is loaded with nutritious ingredients and gets in a good serving of veggies! These hold their shape well so they are perfect for little ones learning to self feed.

What do you need?
1 egg
1 tbsp milk (any kind)
1/4 cup grated vegetables or very finely chopped. I like to use grated raw broccoli and carrot in this.
1 tbsp spelt flour
1 tbsp chia seeds
1/2 tsp paprika
1/2 tsp cumin powder
1/2 tsp coriander powder
Then...
- Whisk together the egg and milk until combined.
- Then add in the grated veggies, flour, chia seeds, coriander, paprika and cumin powder.
- Heat the ghee in a pan and when hot pour the batter in. Cook for a couple of minutes on each side.
- Slice and serve!
