Banana bread in cookie form! These are soft, packed full of goodness, delicious and perfectly sweet! Just omit the honey to make these baby friendly!

I took a poll over on Instagram as to whether you wanted banana bread or banana cookies and it was SO close - the best of both! 

These cookies are great for an after school snack, in lunchboxes or even for breakfast! 

I’m bringing you this recipe in partnership with St Ewe's Super Eggs. The free range hens are fed a special super feed that has been scientifically developed and contains naturally high levels of DHA Omega-3, Vitamin D and Selenium.

Prep: 5 mins 

Cook: 12 mins  

Serves: 12 -14 cookies  

Suitable From: 6 months + (if you omit the honey)

 

What do you need?

2 small or 1 medium- large ripe banana(s)

2 tbsp melted coconut oil

2 tbsp honey (optional - NOTE: No honey for under 1’s)

1 St Ewe's Super Egg

1 tsp vanilla powder, extract or paste

1 tsp Ceylon cinnamon

1 tbsp chia seeds

2 cups almond flour

1/2 tsp baking powder

 

Then...

  1. Preheat your oven to 170 degrees C/ 350 degrees F. Line a large baking tray with parchment paper and set aside.

  2. In a large bowl, mash the banana and then add the egg, coconut oil, vanilla and honey (if using). Stir to combine.

  3. Next add the Ceylon cinnamon, chia seeds, almond flour and baking powder. Combine well.

  4. Scoop out the mixture onto the tray, forming circle shapes. Bake for about 12 minutes until lightly golden.

  5. Ensure that they are completely cool before serving.
