Mixed Bean & Cheese Quesadillas


Mixed Bean & Cheese Quesadillas

These quesadillas are so hearty, nutritious and they packed full of flavour. Beans are a good source of iron, fibre and protein, making this a well balanced meal for your family! 

This meal comes together very quickly and is good finger food for little ones learning to self feed!

Serves: 1 adult & 1 toddler

Suitable From: 6 months +

What do you need?

1/2 tin mixed beans 

1 tsp cumin powder 

1 tsp smoked paprika 

A handful of chopped coriander 

3/4 cup/90g grated cheddar cheese

2 large tortillas 

 

Then....

  1. Drain the mixed beans and add to a blender. Add the cumin and smoked paprika and blend until the beans break down. You can also mash them down with a fork if you prefer. 
  2. To assemble the quesadillas, spread the mixture over half of the tortilla and then sprinkle over the chopped coriander and grated cheese. Then fold over.
  3. Heat a dry pan on a low - medium heat and cook until golden brown, flip and repeat.
  4. Cut into slices and serve.
