Mixed Bean & Cheese Quesadillas
These quesadillas are so hearty, nutritious and they packed full of flavour. Beans are a good source of iron, fibre and protein, making this a well balanced meal for your family!
This meal comes together very quickly and is good finger food for little ones learning to self feed!

Serves: 1 adult & 1 toddler

What do you need?
1/2 tin mixed beans
1 tsp cumin powder
1 tsp smoked paprika
A handful of chopped coriander
3/4 cup/90g grated cheddar cheese
2 large tortillas
Then....
- Drain the mixed beans and add to a blender. Add the cumin and smoked paprika and blend until the beans break down. You can also mash them down with a fork if you prefer.
- To assemble the quesadillas, spread the mixture over half of the tortilla and then sprinkle over the chopped coriander and grated cheese. Then fold over.
- Heat a dry pan on a low - medium heat and cook until golden brown, flip and repeat.
- Cut into slices and serve.
