Banana & Chia Pancakes

Banana & Chia Pancakes 

Easy, simple, nutritious and allergy friendly! No nuts, no eggs and they can be made vegan.

These pancakes are as easy as it gets and they are fluffy, delicious and take minutes to make.

I like adding in chia seeds as they are nutrient dense and a fab addition to your little one’s diet. Chia seeds are high in omega 3 fatty acids and a great source protein, healthy fats, fibre, minerals, vitamins and antioxidants.

You can use any milk you like for these, oat milk tastes lovely if you are looking to make them vegan.

They also freeze well, so make a big batch for breakfast another day!

 

Prep: 5 mins

Cook: 10 mins

Serves: 1 adult & 1 toddler 

Suitable From: 6 months + 

Can be frozen for 3 months  

 

What do you need?

1 ripe banana

1 cup rolled oats

2 tbsps chia seeds

1 tsp baking powder 

3/4 cup milk of choice

Optional:

1 tsp cinnamon

 Then... 

  1. Blitz the oats in a blender and then add in the remaining ingredients. Blend until smooth.
  2. Heat a dash of coconut oil in a pan on a medium -low heat.
  3. Drop in two tbsps of the pancake batter to form mini pancakes, continue until the pan is full; then flip each pancake as bubbles begin to appear and cook for a further 2 minutes. Repeat with remaining batter.
  4. Serve with your choice of toppings.
