Broccoli & Cheese Pinwheels
Fridge raid dinner tonight and this is what I came up with. I had some broccoli that was looking rather sad so I wanted to base dinner around it!
Broccoli and cheese is such a winning combination! A few herbs and spices really elevate this simple dish!
These delicious pinwheels come together so quickly and a great way to amp up veggie intake!

Serves: 4
What do you need?
1 sheet of ready made puff pastry
1 1/2 cups/ 100g broccoli
1 tsp dried mixed herbs or oregano
1/4 tsp pepper
A handful of finely chopped parsley
1 cup/120g grated cheddar cheese
2 tbsps milk
Then...
- Preheat your oven to 200 degrees Celsius and line a baking tray.
- Steam the broccoli until tender and then finely chop.
- Add the mixed herbs, pepper and parsley to the broccoli and combine.
- Roll out the puff pastry and then sprinkle over half of the cheese. Top with the broccoli mixture and then sprinkle on the remaining cheese.
- Tightly roll the puff pastry, starting at one end.
- Using a sharp knife, mark the lines where you cut the pastry (approximately 1 inch in width) and then slice into pinwheels.
- Brush the pinwheels with milk (or you can use one whisked egg).
- Bake for 20 minutes until golden on the top.
- Allow to cool before serving.
- You can store these in an airtight container in the fridge for 3 days. Reheat in the oven.
