Broccoli & Cheese Pinwheels


Broccoli & Cheese Pinwheels

Fridge raid dinner tonight and this is what I came up with. I had some broccoli that was looking rather sad so I wanted to base dinner around it!

Broccoli and cheese is such a winning combination!  A few herbs and spices really elevate this simple dish! 

These delicious pinwheels come together so quickly and a great way to amp up veggie intake!

 

Prep: 10 mins

Cook: 20 mins

Serves: 4 

What do you need?

1 sheet  of ready made puff pastry

1 1/2 cups/ 100g broccoli

1 tsp dried mixed herbs or oregano 

1/4 tsp pepper 

A handful of finely chopped parsley 

1 cup/120g grated cheddar cheese 

2 tbsps milk

Then...

  1. Preheat your oven to 200 degrees Celsius and line a baking tray.
  2. Steam the broccoli until tender and then finely chop. 
  3. Add the mixed herbs, pepper and parsley to the broccoli and combine. 
  4. Roll out the puff pastry and then sprinkle over half of the cheese. Top with the broccoli mixture and then sprinkle on the remaining cheese. 
  5. Tightly roll the puff pastry, starting at one end. 
  6. Using a sharp knife, mark the lines where you cut the pastry (approximately 1 inch in width) and then slice into pinwheels.
  7. Brush the pinwheels with milk (or you can use one whisked egg). 
  8. Bake for 20 minutes until golden on the top. 
  9. Allow to cool before serving. 
  10. You can store these in an airtight container in the fridge for 3 days. Reheat in the oven.
