Caramelized Banana Oatmeal 

I first created this recipe on holiday in Miami with the few ingredients I had to hand!

Since having my son, we always try to book hotels with a kitchen (for the occasional bit of cooking as we are on holiday after all! 🙈😂) as it means I can prep some snacks for him and some days cook breakfast as he is often really hungry when he wakes up!

This recipe was created when he asked for his favourite spiced pear oats but I hadn’t picked up any pears, so I came up with this delicious bowl of goodness using what I had! This is so creamy, comforting and decadent!

Cook: 20 mins

Serves: 1 adult & 1 toddler 

Suitable From: 1 year + (omit maple syrup for under 1’s)

 

 

What do you need?

1 tbsp butter (or coconut oil for vegan/dairy free alternative) 

1/2 cup/45g oats

1 cup/240ml full fat milk  (or plant based milk of choice for vegan/dairy free alternative) 

2 small ripe bananas

2 tsps Ceylon cinnamon

1 tbsp flaxseed

1 tbsp butter  (or coconut oil for vegan/dairy free alternative) 

1 tsp maple syrup (omit for under 12 months)

A few chopped walnuts (omit for nut free)

 

Then...

  1. On a low heat, add the butter to a pan and then add the oats and toast  for a couple of minutes.
  2. Mash 1 banana and add to the oats, stirring well.
  3. Turn up the heat to medium and then add in the milk, flaxseed, 1 tsp cinnamon and cook for 6-7 mins, stirring until thick and creamy (if the mixture seems to thick, add a splash more milk).
  4. In a skillet, heat the butter, 1 tsp of cinnamon (and maple syrup if using). Let it cook for a minute or so until it is bubbling. Slice up 1 small banana and cook on each side for a couple of minutes until they are plump and tender.
  5. Top the oatmeal with the caramelised bananas and chopped nuts. For under 1’s grind the nuts to a powder and for under 5’s chop into fine slivers.
