Lemon & Basil Pasta Salad 

Here is a simple, refreshing and delicious summer salad perfect for lunch or dinner. This tastes even better when made ahead of time and is perfect for lunchboxes too!

Cook: 20 mins

Serves: 1 adult & 1 toddler

Suitable From: 6 months +

What do you need?

  • 1 cup pasta
  • 4 tbsps olive oil
  • 3 tbsp lemon juice
  • 1 grated garlic clove
  • A pinch of black pepper
  • 2 tbsps hemp hearts
  • 3 tbsps Parmesan cheese
  • 1/4 cup butter beans
  • A handful of chopped basil

Then...

  1. Cook your pasta according to the packet instruction.
  2. Gently sauté the garlic until cooked.
  3. In a bowl, combine olive oil, lemon juice, garlic and black pepper.
  4. Toss the pasta with the dressing and then sprinkle over the hemp hearts, butter beans, Parmesan cheese and basil.
  5. Eat immediately or pop into the fridge for a couple of hours.
