Lemon & Basil Pasta Salad
Here is a simple, refreshing and delicious summer salad perfect for lunch or dinner. This tastes even better when made ahead of time and is perfect for lunchboxes too!

Serves: 1 adult & 1 toddler

What do you need?
- 1 cup pasta
- 4 tbsps olive oil
- 3 tbsp lemon juice
- 1 grated garlic clove
- A pinch of black pepper
- 2 tbsps hemp hearts
- 3 tbsps Parmesan cheese
- 1/4 cup butter beans
- A handful of chopped basil
Then...
- Cook your pasta according to the packet instruction.
- Gently sauté the garlic until cooked.
- In a bowl, combine olive oil, lemon juice, garlic and black pepper.
- Toss the pasta with the dressing and then sprinkle over the hemp hearts, butter beans, Parmesan cheese and basil.
- Eat immediately or pop into the fridge for a couple of hours.
