1 Bowl Chocolate Brownies  

Guys, these are insanely delicious! Gooey, fudgey, full of rich chocolate flavour and utterly scrumptious! 

There are just 8 ingredients and they come together in 1 bowl! These are really fun to bake with kids! I added a little Halloween spin and topped them with chocolate and spooky eyes! 

I’m so excited to bring you this recipe in partnership with St Ewe’s super eggs. My family are hooked on these eggs! They are so delicious and jam packed with nutrition.

Serves: 9 brownies 

Suitable From: 2 years + 

To make a bigger batch, just double up the ingredients! 


What do you need?

1 cup coconut sugar

1/2 cup + 1 tbsp melted coconut oil or butter ⁣

1 tsp vanilla paste/extract

2 St Ewe’s Super Eggs

1/2 cup cacao powder (or use cocoa powder)

1/2 cup spelt flour ⁣

1 tsp baking powder ⁣

1/2 cup chocolate chips (optional)

3 tbsp crushed nuts (optional)

Optional Toppings:

Melted chocolate for topping

Spooky edible eyes OR 1 banana and a handful of blueberries 

 

Then...

Preheat oven to 350°F/175 degrees Celsius and  grease/line a 8x8 inch baking dish. 

Combine melted butter/coconut oil, vanilla, cocoa and coconut sugar,  stir until fully combined.

Add your Super Eggs, one at a time and stir until well combined.

Add the spelt flour and baking powder and mix until just combined. Do not over mix! 

Add in chocolate chips and crushed nuts (if using).

Pour into the prepared pan and bake for approximately 20-22 minutes or until the center is slightly set.  Be careful not to over-bake. The brownies will have a slight jiggle to them when you take them out of the oven. 

Allow them to cool completely before cutting - about 30 minutes at room temperature.

If topping with chocolate, spread over the melted chocolate once they are completely cool and then pop into the fridge for the chocolate to harden.

You can decorate them with spooky edible eyes or dice up a banana and some blueberries for a healthier spin!  

Store in an airtight container for 3 days.
