Bliss balls gets a spooky makeover! These monster eye balls are such a fun and festive snack and loaded up with nutritious ingredients to fuel your little ones.
Simple and wholesome ingredients come together in blender, add in some turmeric for natural food colouring and your monster eye balls are ready within the minutes. Almond flour adds plenty of vitamin e and apricots are high in fibre and non heme iron making these a fab snack!

What do you need?
For the bliss balls:
1 1/2 cups dried apricots (soaked in hot water for 10 mins) *see note
1 1/2 cups almond flour
1/2 cup desiccated coconut
1 tsp cinnamon
1 tsp vanilla extract/powder
1 tbsp melted coconut oil
For rolling and decorating:
1/3 cup desiccated coconut
1 tsp turmeric
Edible eyes
Then...
- Add all of the bliss ball ingredients to a blender and whizz until a dough forms. You may need to scrape down the sides a couple of times. If the mixture is a little dry, add another tbsp of melted coconut oil.
- Using a tablespoon, scoop out the mixture and roll into balls.
- Roll in the coconut and turmeric mixture and then stick on the eyes.
- Store in an airtight container in the fridge for up to a week.
Note:
Make sure that the apricots are unsulphured.
