Egg Free French Toast

Whether it’s an egg allergy, a vegan diet, you’ve run out of eggs or you’re endeavouring to follow a more plant based diet then this recipe is for you

No eggs, you can use any milk you like and it all comes together in one bowl! It couldn’t be simpler!

You must let the batter thicken up for about 10-15 minutes, you’re basically look for the same consistency as French toast batter made with egg. You definitely don’t want it too thick like a chia pudding.

Serves: 2 adults & 2 toddlers 

Suitable From: 6 months +


What do you need?

4 slices bread of choice

1/2 heaped tbsp chia seeds

1 small ripe mashed banana

1 1/4 cups milk (any kind)

1/2 - 1 tsp cinnamon

1 tsp vanilla powder/essence

1/4 tsp nutmeg

1 tbsp ghee or coconut oil

 

Then...

  1. In a bowl, combine the banana, chia seeds, milk, cinnamon, vanilla and nutmeg. Mix well and then leave to sit for 10 minutes, until the batter thickens. If it is a little thick, add more milk.
  2. Dip the bread into the batter for about 30 seconds, making sure both sides are well coated.
  3. Heat some ghee/coconut oil in a pan and cook the bread for a couple of minutes on each side, until golden.
  4. Cut into slices and serve!


Note:

You can grind the chia seeds if you don’t want texture.
