Spiced Carrot Fritters
These simple carrot fritters are bursting with flavour and loaded with Vitamin A. Carrots are also high in antioxidants and extremely nutritious. They taste great paired with Greek yoghurt for dipping!

What do you need?
- 1/4 cup buckwheat flour
- 1 tbsp coriander powder
- 1 tbsp paprika
- 1 egg
- 1/4 chopped onion
- 1 grated carrot
- Oil for frying
Then...
- Combine the buckwheat flour, coriander and paprika in a bowl.
- Add in the egg, onion and grated carrot. Stir to combine. If the mixture is a little thick, add in a splash of milk.
- Take spoonfuls of the batter and pour into a pan. Cook on each side for a couple of minutes.
- Serve warm!
