Creamy Spinach, Ricotta & Lemon Pasta
Z and I threw together this simple and delicious pasta for lunch and it was his first time cooking at the stove!
This dish comes together in 15 minutes and will make a great addition to your weeknight dinner rotation! The ricotta makes this dish SO creamy and the the lemon zest adds a burst of freshness!
The spinach adds fibre, Vitamin A, C and iron and the ricotta adds protein and fat making this a balanced meal.
I tend to cook with spelt, quinoa or chickpea pasta but any pasta you prefer will work. This is also so delicious with linguine!

Serves: 1 adult & 1 toddler

What do you need?
1 cup pasta of choice
1 tbsp ghee or olive oil
2 shallot or 1 onion, finely diced
1 heaped tsp minced garlic (or more to taste)
1 1/2 cups spinach, chopped
3/4 cup ricotta cheese
1/4 cup water (from the pasta)
Zest from 1 lemon
Then....
- Cook the pasta according to the packet instructions. Add in a little extra water as you will add this to the sauce.
- Heat the ghee or oil in a pan over a medium heat and add in the shallots and garlic. Sauté for a couple of minutes.
- Then add in the spinach and cook for another couple of minutes.
- Add in the ricotta and lemon zest, stirring well to combine.
- Then add in 1/4 cup water from the pasta and stir to combine until the sauce becomes creamy.
- Stir in the cooked pasta and serve warm.
- Top with black pepper and a sprinkling of parmesan.
- A sprinkling of cayenne pepper is delicious with this for adults!
