Apple & Raspberry Pastries
These little beauties are perfect for breakfast or snack time and taste like puff pastry apple pies with a twist! They come together so quickly and taste AMAZING!
You can also make them ahead of time, pop into the freezer and bake when you ready! I love the combination of apple and raspberry but you could use any berries you like as the juxtaposition of sweet and tart is a delicious combination.
There is no added sugar, just natural sweetness from the fruit, cinnamon and vanilla making them perfect for babies too!
You can mix up the berry filling and use whatever berries you have on hand/are in season. I also recommend use a sweeter variety of apples for this recipe as there is no added sugar! You can however add in a drizzle of maple syrup if you prefer.

What do you need?
2 sheets of shop bought puff pastry ⠀⠀⠀
3 tbsps milk
For the filling:
2 apples, peeled and chopped into very small pieces
1 cup raspberries
1 tsp lemon zest
1 heaped tsp cinnamon ⠀⠀
1 tsp vanilla powder (or extract)⠀
Optional:
You can add some maple syrup if you prefer them sweeter. Add this along with the filling ingredients above.
Then...
1. Preheat your oven to 180c and line a baking tray with parchment paper.
2. Heat the butter/coconut oil in a pan and add in all of the filling ingredients. Sauce until the apples are soft. Set aside too cool.
3. Cut the puff pastry into 8 squares and place onto the baking tray.
4. Spoon the filling onto half of a square leaving a 1/2 inch border. Repeat for the remaining squares.
5. Fold the empty side of the square over the filled side and gently press down with your fingers. Then use a fork to seal the triangle. Repeat for all of the squares.
6. Brush with milk (or an egg if you prefer) and bake for about 20 minutes until golden and puffed up.
7. Allow the pastry too cool before serving to little one's as the filling will be very hot.
