Baby Friendly Pumpkin Pancakes


Baby Friendly Pumpkin Spice Pancakes 

It’s officially pumpkin season as we seem to be eating pumpkin in some form everyday!! I’m not complaining though and neither is Z! These fantastic little pancakes always get a huge thumbs up and they only take 10 minutes to make and freeze well!

 They are perfect for even the littlest of hands and I guarantee you they’ll be gone in seconds!

 These pancakes are not only fluffy and bursting with flavour but they are also packed full of Vitamin A, protein and iron.

 

Prep: 5 mins

Cook: 10 mins

Serves: 1 adult & 1 toddler 

Suitable From: 6 months +

Can be frozen for 3 months  

What do you need?

1/4 cup spelt flour

1/4 cup oats

1/2 cup pumpkin puree

2 eggs

1/4 cup full fat Greek yoghurt

1 tsp baking powder

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp vanilla powder/extract

1/2 tsp all spice

 

Then...

  1. Heat 1 tbsp of coconut oil in a frying pan on a medium – low heat.
  2. In a small bowl, whisk together the dry ingredients.
  3. Then add in the pumpkin purée, eggs and Greek yoghurt. Mix until well combined.
  4. Pour small circles of the batter into the pan and cook each side for between 2-3 minutes; once bubbles form on to the top, flip them over, and cook for a further 2 minutes. Repeat with the remaining batter.
