Berry & Coconut Porridge Bars
This is such a quick and easy breakfast option and provides slow release carbs, fibre and plenty of flavour.
They are soft but hold their shape well, making them perfect for even the youngest eaters! You can really customise the flavours to suit your little ones palette. I find the cinnamon adds some natural sweetness but you could add in finely chopped dates, raisins or a dash of honey (only suitable for those over 1).

Serves: 1 adult & 1 toddler

What do you need?
3 tbsps of porridge oats
2 1/2 tbsps milk (any kind will work)
A small handful of blackberries
1 tbsp desiccated coconut
1/2 tsp cinnamon
1 tsp chia seeds
Then...
1. Add the oats, milk and blackberries to a bowl and stir until well combined. The blackberries will start to break down.
2. Stir in the cinnamon, coconut and chia seeds and mix well.
3. Press the mixture into a microwave/oven safe dish and press down.
4. Cook in the microwave for 2 minutes OR bake in the oven for 20 minutes at 180c.
5. Slice into fingers while hot.
6. Allow to cool before serving.These will keep in the fridge in an airtight container for 3 days.
