Broccoli, Tomato & Cheese Quesadillas
These quesadillas come together within minutes and are loaded with flavour and veggies. They are perfect for little hands and make a delicious meal for the whole family.
Sautéing the veggies adds depth of flavour and takes the simple broccoli and cheese combination to another level.
Serve alongside some avocado and fruit for a balanced and delicious meal.

What do you need?
1 tbsp olive oil
1/2 cup/40g broccoli, chopped
1 tomato, finely chopped
1 tsp garlic powder
1 tsp dried basil or a handful of chopped fresh basil
1/3 cup/40g grated cheddar cheese
2 tortilla wraps
For adults: add in some chopped jalapeños!
Then....
- Heat the oil over a low - medium heat and add the broccoli and tomatoes. Cook for a few minutes and then add the garlic powder and basil. Cook for another minute.
- To assemble the quesadillas, spread the sautéed veggies over half of the tortilla and then sprinkle over the grated cheese. Then fold over.
- Repeat with remaining mixture.
- Heat a dry pan on a low - medium heat and cook until golden brown, flip and repeat.
- Cut into slices and serve.
