This Rocky Road recipe is a perfect festive sweet snack! You can make this no bake sweet delight ahead of time and it also makes a lovely edible gift!

This version has a little twist on the traditional rocky road recipes. It is so tasty and easy to customise to your preference!

To make a bigger batch, just double up the ingredients! 

What do you need?

255g high quality chocolate

3 tbsp peanut butter

1/2 cup crushed pretzels

1/2 cup crushed almonds

1/3 cup buckwheat groats

1/2 cup marshmallows

You can really customise this recipe to your preference, use any nuts you prefer, you could switch out the marshmallows for cranberries or other dried fruit etc

 Optional:

2 tbsp crushed seeds/nuts to top 

Then...

  1. Melt the chocolate in Bain-Marie and then when cooled add to a large mixing bowl.
  2. Add in the peanut butter and combine.
  3. Stir in the remaining ingredients, mixing well.
  4. Pour into a lined baking dish and spread the mixture evenly.
  5. Top with some crushed nuts (optional).
  6. Freeze for at least 2 hours, until set.
  7. Remove from the freezer and let it sit at room temperature for about 10-15 minutes before slicing.
  8. Store in the fridge in an airtight container for up to 2 weeks.
