Coconut Snowmen Bliss Balls

These are addictive! Seriously, Z ate half the mixture before we were able to roll them into balls!

 

This a great one to get your kids involved in making. They can help pour the ingredients into the blender, roll into balls and decorate! Z had so much fun making these. He decided on goji berries for the nose and raisins for the eyes and buttons. I sliced up the raisins to make them smaller and he did everything else!

The almond flour adds protein, vitamin E and healthy fat and the desiccated coconut is loaded with iron and fibre making this a great snack!

Serves: 20 balls

Can be frozen for 3 months  


What do you need?

1 3/4 cups desiccated coconut

6 tbsps almond flour

3 1/2 tbsps canned coconut milk

3 tbsps melted coconut oil

2 tbsps maple syrup

1/2 tsp vanilla extract


To decorate:

Raisins

Goji berries

Strawberries 

 

Then...

  1. Add all of the ingredients to a blender and whizz until combined. The mixture will be a little sticky.
  2. Scoop out tablespoons of the mixture and roll into balls. You can roll them in some extra desiccated coconut if you like.
  3. Pop the balls onto a lolly stick and then decorate! 
  4. Store in an airtight container in the fridge for a week.
