Healthier Rice Crispy Bars
These peanut butter puffed rice cereal bars are so delicious and a healthier spin on the classic rice crispy bars!
They are so simple to make and a fun recipe to get your little one’s involved in! So gather up your ingredients and join us to whip these up!
You can use any rice crispy cereal, I tend to use brown rice cereal but you can use any you have to hand.
The chocolate is completely optional but a fun way to use up any leftover Easter chocolate!
Prep: 5 mins
Cook: 2 hrs to freeze
Serves: 16 bars
NOTE: No honey for under 1’s.
What do you need?
4 cups rice crispy cereal
1/2 cup natural peanut butter
1/2 cup honey or substitute maple syrup
Optional:
1 tsp vanilla extract or powder
Melted chocolate to drizzle over the bars.
Allergy Swap/Make It Vegan:
Use sunflower seed butter instead of peanut butter.
muse maple syrup instead of honey.
Then...
- Line a baking tray with parchment paper and set aside.
- Combine the rice crispy cereal and peanut butter in a large bowl. Mix well.
- Pour in the honey and vanilla (if using). Keep stirring until the mixture comes together.
- Press the mixture into the lined baking tray, pressing down firmly to pack it all in.
- If you are using chocolate, drizzle this over the top.
- Pop into the freezer for 2 hours to firm up.
- Store in an airtight container in the freezer for up to 3 months. This will stop the cereal become stale.
