What do you need?

 2 1/4 cups spelt flour

1 tsp baking powder

2 tbsps flaxseed

1 tsp cinnamon

1 tsp vanilla powder/paste/extract

1 1/2 cups milk of choice

1 tbsp coconut oil (+ extra for cooking)

To serve:

1 tbsp peanut butter

2 bananas

A pinch of cinnamon

  1. Mix together the flour, baking powder, flaxseed, cinnamon and vanilla.
  2. Slowly pour in the milk and the coconut oil. Combine until a smooth batter forms.
  3. Heat a dash of coconut oil in a pan and then pour in the batter. I use a large ladle full for each crepe. Spread the batter thinly and cook for a couple of minutes on each side until golden.
  4. Top with peanut butter, sliced banana and a dash more cinnamon.
