Ginger & Coconut French Toast

I used to make this so often for Z but haven’t made it since last Christmas! I’m always recipe testing and sometimes I forget about old favourites! He devoured this for his snack today!

The cute cut outs are totally optional but so festive and fun! Get your little ones involved and let them use cookie cutters to cut the bread! This recipe is great to gets kids in the kitchen as they can get involved which whisking, mixing and dipping!




This French toast is so warming, delicious and a cinch to whip up! If you do add this to your breakfast or snack rotation be sure to tag my over on Instagram!

Prep: 5 mins

Cook: 10 mins 

Serves: 1 adult & 1 toddler 

Suitable From: 6 months +

 

What do you need?

4 slices bread of choice

2 eggs

1/3 cup canned coconut milk or any milk of choice 

1/4 cup desiccated coconut

1/2 - 1 tsp ginger powder

1/2 - 1 tsp cinnamon

1/4 - 1/2 tsp all spice

1 tbsp ghee or coconut oil

 

Then...

If baking:

  1. Preheat your oven to 180c and line a baking tray with parchment paper. Lightly grease the paper with the ghee.
  2. In a bowl, beat the eggs with the spices and then add in the milk and coconut, mixing well.
  3. Dip the bread into the batter for about 30 seconds, making sure both sides are well coated.
  4. Place the bread onto the baking tray and bake for 15 minutes.
  5. Cut into slices and serve!

 

If cooking on the stovetop:

  1. In a bowl, beat the eggs with the spices and then add in the milk and coconut, mixing well.
  2. Dip the bread into the batter for about 30 seconds, making sure both sides are well coated.
  3. Heat some ghee/coconut oil in a pan and cook the bread for a couple of minutes on each side.
  4. Cut into slices and serve!
