Pina Colada Popsicles

These delicious popsicles are naturally sweetened with honey, refreshing and bursting with tropical flavour!

Pineapple adds a boost of vitamin C, fibre and is loaded with vitamins and minerals! 

A splash of rum in adult versions is SO delicious too! 

 

Prep: 5 mins

Cook: 5 hrs 

Serves: 10 Popsicles 

Suitable: 1 year + (see note to modify for under1’s)

 


What do you need?

1 can full fat coconut milk 

1/4 cup desiccated coconut 

1 tbsp honey * see note

A squeeze of lime juice (optional)

1 cup chopped pineapple (fresh, canned or frozen)

1 tsp vanilla (powder, extract or paste). 

 

Then...

  1. Add everything to a blender and blend until smooth. 
  2. Pour the puree iinto popsicles moulds and then freeze for a minimum of 5 hours until set.

Note: No honey for under 1’s. You can omit as the fruit adds natural sweetness.
