Pumpkin Pie Overnight Oats

 

The easiest and most delicious grab and go breakfast or snack! I love overnight oats as it’s minimal prep time and no cook time! Perfect for busy mornings!

These oats are creamy, warming and literally taste like pie!

Prep: 5 mins

Cook: Overnight 

Serves: 1 adult & 1 toddler 

Suitable From: 1 year  + (omit honey to make suitable for under 1’s)

What do you need?

1 cup oats

1 1/4 cups milk (any kind)

1 tsp vanilla powder/extract

1 tsp cinnamon

1/2 tsp all spice

1/4 tsp nutmeg

3 tbsps chia seeds

1 tbsp honey * (see note)

1/2 cup pumpkin purée

To top:

Crushed pecans to top * (see note)

 

Then...

  1. In a jar, combine all the ingredients and mix well.
  2. Cover the jar and leave in the fridge for a minimum of 5 hours, ideally overnight.
  3. The next morning, serve straight from the fridge topped with the pecan nuts.

 

Note:

No honey for under 1’s.

No whole nuts for under 5’s.Ensure the nuts are crushed.

 

Make it vegan:

Substitute the honey with maple syrup
