Sweetcorn & Courgette Fritters

These delectable courgette and sweetcorn fritters are lightly spiced, crispy on the outside and bursting with fresh flavour. Serve them up with a cooling yoghurt dip for an easy and balanced meal. 

These are perfect for dipping as they hold their shape well and can be cut into strips for babies to practice self feeding. 

The sweetcorn adds fibre and courgette is high in vitamin c and potassium. Cumin and coriander add depth of flavour to this simple fritter recipe!

Serves: 1 adult & 1 toddler

What do you need?

1/2 cup sweetcorn (fresh or frozen will work) *see note 

1 egg

2 tbsps spelt flour

1/2 courgette (zucchini)

A small handful of grated cheddar cheese

1/4 tsp baking powder

1/2 - 1  tsp coriander powder 

1/2 tsp cumin powder 

A splash of milk of choice

 

 


Then....

  1. Grate the courgette and then using a tea towel squeeze out all of the moisture. 
  2. Add all of the ingredients to a blender and whizz until combined. Or, add to a mixing bowl and mix until well combined. I like to mash down the sweetcorn kernels so they break apart a little.. 
  3. Heat a dash of butter or oil in a pan over a low - medium heat. When hot, pour small circles of the batter into the pan and cook each side for between 2-3 minutes; once you see bubbles forming on to the top, flip them over and cook for a further 2 minutes. Repeat with the remaining batter.
  4. Serve with yoghurt for dipping. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Make it vegan: 

Replace the egg with a chia egg by mixing together 1 tbsp chia seeds with 3 tbsps water and let the mixture sit for 10 minutes, until it becomes a gel.

Replace the cheese with nutritional yeast.
